The Kitchen Department is responsible for producing high quality meals for all guests dining our Food & Beverage outlets, including our Pearls Bar, Oyster Bar & Grill, Terraces Restaurant and Oasis Pool Bar. They are responsible for creating amazing dining experiences for our guests.
We are currently seeking a qualified and experienced Full Time Chef de Partie - Banquets to join our busy food preparation team. As a member of our five star culinary team, you will support the Sous Chef with daily management and food preparation and lead and direct Banquets and Restaurant Chefs. You will be working predominantely in our busy banquets/events kitchen and covering other areas when needed. This includes a la carte, buffet, cold larder and mise-en-place. Experience in a range of different cooking styles, Indian cuisine and preparation techniques is essential, as is proven experience in supervision, training and development of the kitchen brigade. To assist us in maintaining our reputation for outstanding food and beverage quality, only candidates with a high level of professionalism and a commitment to excellence need apply.
The successful candidate will possess:
+ Minimum a Certificate III in Hospitality (Commercial Cookery)
+ Prior experience in a large kitchen
+ A genuine passion for cooking
+ You must also be available to work a rotating roster, including nights and weekends.
+ Self-motivation and the ability to work unsupervised
+ Proven experience as a Chef de Partie in a fast paced, dynamic environment
+ Previous experience in banquet/events floor environment
+ Ability to manage a small kitchen and work autonomously
+ Knowledge and experience in menu design, costing and implementation
+ Experience in managing cost of goods
+ Understanding of Food Safety standards and HACCP
+ Availability across the week including evenings and weekends
+ Essential that you are a great team player who thrives in a fast paced environment
